Flank, a New American Beefsteak restaurant by the Whole House Group, is committed to leaving a good taste in your mouth. This steakhouse in Waltham, Massachusetts, has revived the turn-of-the-century “Beefsteak dinner,” an old boy’s club tradition. From the mid-1800s until the Prohibition Era, New York political fundraising dinners involved plenty of beer, cocktails and beef eaten without utensils, napkins or restraint. Guests gorged on piles of beef eaten with their hands while they talked about politics, kickbacks and payback.

Flank has revived and reimagined a more refined version of the Beefsteak dinner fit for the 21st century. Flank’s updated Beefsteak concept blends the blue-collar style of the original dinners with the aesthetics and taste of a contemporary fine dining restaurant, where cutlery and napkins are provided, but not required.

Jordan Mackey, culinary director for Flank and the Whole House Group, described Flank’s mural, recreated from one of only two photographs that exist of a traditional Beefsteak dinner. Painted by a Boston graffiti artist, the mural “pays homage to that era of the turn of the century. Eating with your hands—it’s really a huge element of what we do here.”

Flank prides itself on providing guests with a large selection of fine wines, including a special area where customers are given the opportunity to house their own wine selections.
