Poco dolce, Italian for “not too sweet” or “just a little sweet” translates also the core idea behind Poco Dolce Confections—to craft delicious and unique bittersweet chocolates. When Kathy Wiley started the shop in 2003, it was a small bakery specializing in Italian pastries. Kathy soon discovered her true passion for creating chocolates that offer a mix savory and sweet tastes.
"We were one of the ones who started doing salt on chocolate, we’ve been doing 15 years. And so that’s really one of our signatures,” explained owner Kathy Wiley.
All of Poco Dolce’s gourmet chocolates and confections are created in small batches in their San Francisco kitchen, using the finest, GMO-free, all-natural ingredients. One of their signature items, the Tiles, offer a variety of flavors, including Aztec chili, ginger, sesame toffee, and burnt caramel, their most popular flavor.
Another staple in Poco Dolce’s chocolate confection is the use of olive oil in their recipes. "I love olive oil, I love chocolate, so I just put them both together. It has a much more velvety smoothness to it. It’s an extra-virgin California olive oil and it’s our top seller in our bars, for sure,” Kathy added.
